Assembly American Brasserie Opens Downtown

Downtown Toledo just got a new spot for Glass City foodies to enjoy.

Assembly American Brasserie, 101 N Summit St., located inside the Hiltons of Toledo Downtown complex. The restaurant opened on Jan. 23, bringing a midwestern flare to guests’ dining experience. 

“This new dining experience boasts an industrial chic design that gives a nod to the idea of building or creating something that fits together to create a hub for locals and visitors alike,” a spokesperson with the restaurant said in a press release. “Assembly is not just a place to eat; it is a place where food, culture, and community converge, offering a casual and approachable setting that reflects the warmth of the Midwestern spirit.”

The menu features heightened Brasserie-inspired dishes, including mussels, buttermilk walleye fish fry, 12-hour brined split chicken, beef bourguignon, sandwiches, burgers and more delicious dishes. 

The restaurant also has a large beverage menu. Guests can enjoy both domestic and seasonal local brews including beers from Maumee Bay Brewing, Inside the 5, Heavy Beer Co. and Earnest Brew. They also have an extensive cocktail menu.

Delight yourself in lunch, dinner or an “epic weekend brunch” at Assembly American Brasserie. The brunch features their specialty drink, “Big Bold Bloody Mary.” Other alcoholic brunch beverages include a strawberry rhubarb bellini, an alcoholic coffee drink, a napa mimosa, a daybreak old fashioned, an apple cider mimosa and more.

The restaurant was brought to Toledo by First Hospitality, a national hospitality development and management company. 

“As we embark on this journey of opening a new restaurant it isn’t just about serving dishes; it’s about creating memorable dining experiences centered around flavors and a gathering spot that resonates with the community.” says Danny Py, First Hospitality Vice President of Food & Beverage. “We look forward to welcoming all, dwellers alike, to Assembly again and again.”

American Assembly Brasserie also has two private event rooms for guests to rent. The Drawing Room has seating accommodations for up to 16 people for small private events and The Foundry can accommodate up to 45 people for larger private events.
